Sterlet sturgeon caviar

Caviar ranges in quality and in cost, depending on the fish the roe is harvested from. In Russia, the quality of caviar is designated by the label color, with particular colors assigned to different species of the sturgeon family. Our ‘Red Label’ line of caviar offers the roe of Sterlet, an entry level option for the gourmet.

Notwithstanding the lower cost of its roe, Sterlet is a ‘true’ sturgeon species and its caviar is highly coveted. For some reason, Sterlet caviar is often confused with Sevruga caviar – the latter sturgeon being nearly extinct, while the former is quite abundant in European waters. Sterlet caviar is lighter in color to the Ossetra, with the eggs being gray to almost black in color.
